We are nearing the end of Lent.  How many of you don't eat meat on Fridays this time of year?  Do you start to find it hard to plan something meatless for the whole family?  Well, this old Italian family recipe of mine is great for meatless Fridays.  A sneaky way to have seafood that is both inexpensive and widely appealing, even to the kids.

  2. I hope you like it. Definitely let me know if you and your family enjoy it or not. I was trying to think whether it needs 2 or *3* can fulls of water added to it. Start with 2 and if it seems way too thick, try adding another. This is the hardest part for me, trying to record recipes with actual measurements. But it really will be a good thing for me to start working on. Then I can start making recipe cards to pass on to others.

  3. So, we literally just now ate this. At 11:30 at night. Lol. I watched a Chopped episode themed on Italian AND was feeling hungry. I immediately thought of this recipe and even had enough ingredients on hand to make a half batch. I thought it was really good AFTER adding the butter. Before the butter, I thought it was just OK. After the butter, I thought it was excellent. My boys both had it after the butter. Our son LOVED it. Hubby liked it fine, but he's sick right now. I'm not sure the taste was fully coming through for him. I love that it's so fast, easy, and has a protein without needing to cook meat. Thank you, Laurie! I'm looking forward to trying more of your recipes! =) Oh! And I'm guessing it's 3 cans water. With using only 1 can paste, I needed to use two cans water, and it was still pretty thick. :)

  4. I'm really glad to hear you all liked it. My family never used butter in this recipe, but you know, I really don't think the quality of food is as good as it was "back in the day." (Well, without spending a lot on it, anyway.) And so I started adding the butter when the tomato paste just didn't have quite as good a flavor at times, and once I did add it, my family preferred it that way. It adds a little creamy buttery flavor to the acidic tomatoes. Any time now if a sauce tastes a little flat, I often will add a dab of butter to it. Thanks for letting me know about the water too. I was thinking 3 cans would be more accurate. I am really happy you liked it! I was a bit worried, being the first recipe to post...
